The research by the Department of Epidemiology and Prevention – I.R.C.C.S. Neuromed, Italy, in collaboration with the Italian National Institute of Health and the I.R.C.C.S. Istituto Dermopatico dell’Immacolata of Rome involved participation of about seven thousand men, residents of Molise region. The antitumor action was confirmed also by laboratory experiments. Researchers from the Fred Hutchinson Cancer Research Center in Seattle developed a study with similar results. Only the extract containing caffeine reduced cancer cells proliferation, as well as their ability to metastasize. The Italian coffee method produce a higher concentration of bioactive substances in the resulted beverage. An appropriate espresso can only be had in a bar, where large machines produce around 9 atmospheres (900 kPa) of pressure during brewing, in order to properly extract essential oils. Only coffee grounds specifically labeled as “espresso ground coffee” must be used.
